As its almost pancake day, we wanted to share 2 of our exciting recipes that we have shared with all of our TRANSFORM® Fitness Members.
We all love to indulge in some delicious pancakes from time to time.. even us (melting kinder chocolate between a stack of pancakes is our favourite...)
But, we also know that there are a ton of calories in them as well. It's ok to treat yourself, but we thought, why not have our cake and eat it as well?
So we came up with the tasty recipes, to help you enjoy Pancake Day without worrying too much about the waistline ;)

GLUTEN FREE PANCAKES
2 Eggs • 1 Mashed banana • 1/4 Cup Coconut Sugar • 1 Tbsp. Vanilla Extract • 1/4 Tsp. Almond Extract • 1 1/2 Cups Blanched Almond Flour • 1/2 Tsp. Baking Soda • 1/2 Tsp. Sea Salt • Coconut Oil
Combine the mashed banana, eggs, coconut sugar, vanilla and almond extracts in a food processor
Add the flour, soda and salt. Mix well. Let the batter sit for 15 minutes
Preheat coconut oil on your pan over medium heat
Ladle pancake batter by ¼ cup onto the pan
When bubbles form, flip the pancakes to cook other side
Serve with Agave Nectar or Fresh Berries
CARROT CAKE PANCAKES
1 1/2 Cups Almond Flour • 1/2 Cup Coconut Flour • 1/2 Cup Applesauce • 1/2 Cup Ghee • 2 Cups finely shredded or chopped Carrots • 6 Eggs • 1½ Tsp. Baking Soda • 2 Tbsp. Ground Cinnamon • 1 Tsp. Ground Nutmeg • 2 Tsp. Ground Ginger • 2/3 Cup Full-Fat Coconut Milk • Coconut Oil
Combine the almond flour, coconut flour, baking soda, cinnamon, and nutmeg in a large bowl.
Add the remaining ingredients and mix until well blended.
Preheat a pan over a medium-high, and add some coconut oil.
Pour about half a cup of pancake mixture onto the pan, and cook on each side for about 3 minutes.
Repeat for each pancake.
